Cajun Spiced Potatoes




Cajun spiced potatoes with creamy sauce are perfect as an appetizer for your next get togrther or family gathering. It is loved by all and very easy to make. The sauce can be made ahead of time and stored in the refrigerator. Hope you enjoy this dish as much as my family does.



For Cajun Spice Mix


 Black pepper - 1 teaspoon
 Smoked paprika/Kashmiri chili powder - 2 tablespoons
 Garlic powder - 1 tablespoon
 Onion powder - 1 tablespoon
 Dried thyme - 1 teaspoon
         Dried parsley - 1 teaspoon
 Dried oregano - 1 tablespoon
         Red pepper flakes - 1/2 teaspoon
         Salt   -  2 teaspoons or to taste


For Potatoes


 Baby Potatoes  - 1 pound(450 gms)
 Oil - 3 tablespoons, divided use.
 Salt - 1 teaspoon
         Rice or all purpose flour - 2 tablespoons
         Cajun spice mix *  -  1.5 tablespoon 
         Chopped onion  -  1/4 cup
         Fresh cilantro/parsley   -  1/4 cup

 For Cajun Sauce


         Mayonnaise *  -  1/4 cup
         Sour cream *  -  1/4 cup
         Cajun spice mix   -  1.5 tablespoon
         Tomato ketchup   -  1 tablespoon       
      

*You can use all mayonnaise (regular/eggless) or a combination of sour cream & mayonnaise OR sour cream and plain yogurt.

METHOD


1.To make the cajun seasoning: Mix all the herbs and spices mentioned and set aside.


2. To make the creamy cajun sauce: Mix all the ingredients for the sauce and set aside.


3.Wash and scrub baby potatoes to remove dirt. Add water to electrical pressure cooker insert. Sprinkle salt over the potatoes. Pressure cook on high pressure for 4 minutes. After 4 minutes, immediately release the pressure. Potatoes should be just cooked and not mushy. Alternately, you can cook potatoes in stovetop pressure cooker for 1 whistle or boil in water for 12-15 minutes until just cooked. Let the potatoes cool down slightly. Flatten the potatoes with a potato masher. 


4 Combine 1.5  Tbsp of seasoning with 2 tbsp of rice/all purpose flour. Lightly coat the potatoes with the flour mixture. Start sauté mode. Add some oil in a pan  or the instant pot insert and cook the potatoes for 12-15 minutes. Flip the potatoes half-way to cook on both sides.  Also, you can bake the potatoes in an air-fryer or oven at 375º F (190º c) for 15 minuets. Drizzle some oil over potatoes and  keep in pre-heated oven, turning them half-way. Remove the potatoes and arrange in a plate.


5.Top the potatoes  with the prepared sauce and some chopped onions and cilantro or parsley. Cajun spiced potatoes are ready to enjoy!
