Vegetable Pasta with Cream Cheese And Herbs



If you looking for a quick and easy meal, then this vegetable pasta with cream cheese and herbs is perfect! Cream cheese gives this pasta a very rich and creamy texture without the use of any cream or bechemel sauce. Addition of fresh herbs and vegetables make it very flavourful and nutritious one pot meal.


Serves 4

  • Onions- 1 medium, chopped
  • Garlic- 4-5 cloved, chopped
  • Zucchini- 1 small, chopped
  • Peppers- 1/2 cup chopped
  • Spinach- 1 cup,chopped
  • Corn kernels- 1/2 cup
  • Fresh basil- 1/3 cup, chopped
  • Fresh parsely- 3 tablespoons, chopped
  • Dried Italian herbs- 1/2 teapoon
  • Red chilli flakes- 1/2 teaspoon or to taste
  • Cream cheese- 4 ounces (1/2 cup)
  • Whole milk- 1 cup
  • Butter- 1 tablespoon
  • Olive oil- 2 tablespoons
  • Penne pasta- 8 oz (about 3 cups)
  • Water- 2 cups
  • Salt- To taste
  • Shredded cheese- 1/2 cup
  • Crushed black pepper- To taste

*If you prefer the vegetables to be soft, you can layer them on top of pasta and

pressure cook them along with pasta.

Electric pressure cooker directions:

1. Start the saute mode. Once it gets hot, add 1 tablespoon of oil and add the peppers, zucchini, and corn. Saute for 3-4 minutes. Take out the sauteed vegetables in a separate bown and set aside. Add the remaining oil and add the garlic and onions saute for 2-3 minutes. Add the italian herbs and chilli flakes. 2. Add the pasta, water, salt, and pepper to taste. Pressure cook on high for 4 minutes. Release any excess pressure after 5 minutes. 3. Add the cream cheese, milk, and sauteed vegetables to the cooked pasta.. 3. Stir in the fresh herbs, chopped spinach, and shredded cheese. If you want the sauce to be thicker, you can cook it on saute mode for 3-4 minutes. 4. The pasta is ready to serve!

Stovetop Directions:

1. Saute the garlic, onions and the vegetables in olive oil in a large pan. Add the italian hebs and the chilli flakes.

2. In a separate pot, boil the pasta according to the package directions and drain.

3. Add the drained pasta, cream cheese, milk, and the seasoning.

3. Stir in the fresh herbs, chopped spinach and shredded cheese.

4. The pasta is ready to serve!
