Gajar ka Halwa - Carrot Halwa
Indian Carrot Pudding
Gajar halwa/ carrot halwa is a popular Indian dessert specially made during the winter time. But my family enjoys eating this delicious dessert year around or whenever I end up with a lot of carrots in my fridge. This recipe is very easy and requires very few ingredients. I have shared both electric pressure cooker method and stovetop methods. The addition of almonds and cream gives the halwa a very rich flavour without using a lot of ghee or mawa.
Makes 12 servings
- Carrots 3 pounds( peeled & grated)
- Sugar 1 -1/4 cups(250 gms)
- Almond flour/almond meal 2/3 cup
- Milk 1 cup
- Heavy cream 1/2 cup
- Cardamom powder 1.5 teaspoon
- Chopped pistachios 4 tablespoons
- Chopped cashews 4 tablespoons
- Water* 1/4 cup
- Clarified butter/ghee 2 tablespoons
- Poppy seeds(optional) 1 tablespoon, roasted
*Use water only if using electric pressure cooking, as it prevents the carrots from burning.
Step by step video instructions:
Electreic Pressure Cooking Method:
1. Wash and grate the carrots.
2. Start the saute mode and add ghee/clarified butter.
3. Add the carrots and saute` for 3-4 minutes.
4. Cancel saute, add the water, milk, sugar and cream.
5. Cook on high pressure /porridge mode 12 minutes.
6. Once the pressure releases, start saute' mode again and add the almond flour or powdered almond.
7. Cook for 5-7 minutes until all the moisture is evaporated.
8. Add the cardamom powder, chopped nuts and poppy seeds.
9. Carrot halwa is ready to serve.
Stovetop Cooking Method:
1. Wash and grate the carrots.
2. Heat a heavy bottom pan and add ghee/clarified butter.
3. Add the carrots and saute for 3-4 minutes.
4. Add milk, sugar and cream.
5. Keep stirring and mixing in between until all the moisture is evaporated.
6. Add the almond flour or powdered almond and mix well.
7. Add the cardamom powder,chopped nuts and poppy seeds.
8. Carrot halwa is ready to serve.
