Instant Pot Pasta With homemade Basil Tomato Sauce - This is a family favourite one pot meal. This pasta comes together in under 30 minutes and is a very easy, no fail recipe. You don't need to cook the sauce and pasta separately.  The pasta is cooked in a flavourful tomato sauce with garlic, onions and  Italian  herbs. I like to add fresh, seasonal vegetables to make it nutritious and wholesome.

Ingredients 

(Makes 4 servings)


Olive oil - 3 tablespoons

Onions - 1/2 cup chopped

Garlic chopped - 2 tablespoons

Carrots - 1/3 cup chopped

Zucchini - 1/3 cup chopped

Red pepper - 1/3 cup chopped

Green pepper - 1/3 cup chopped

Broccoli florets - 1/3 cup 

Mixed Italian herbs - 1 tsp

Chili flakes - 1/2 tsp or to taste

Salt  -  2 tsp or adjust to taste

Sugar  - 1/2 tsp(optional)

Butter -   1 Tablespoon

Dry pasta - 2.5 Cups (10 oz), such as Penne or Rigatoni

Water   - 2.5 Cups

Tomato Puree - 1.75 Cups

Fresh basil - 1/2 Cup

Cheese    -  1/4 Cup  grated parmesan(optional)

Optional add-ins for pasta: Add 1/2 cup of cream or cream cheese after pasta is cooked for creamy sauce.

Instant Pot Basil Tomato Pasta


Method:

1. Start the sauté mode of Instant Pot/ electric pressure cooker, add 3 tablespoon of olive oil , add chopped onions, crushed garlic cloves, mixed Italian herbs (rosemary,oregano, basil), chili flakes. Add 1/3 cup of each  chopped carrot, green pepper, red pepper . Sauté for 2-3 min. Turn off sauté. 

2. Add, 2.5 cups pasta. Mix well. Add the broccoli and zucchini. Add water,tomato puree and spread on top but don't mix. Add the salt, pepper,sugar(optional). Top with butter. Close the lid.

3. Cook on high pressure for 4 min. Do a quick pressure release after 5 minutes of natural pressure release.

4. Add 1/ 2 cup of fresh basil and mix well . Optional( Top with grated parmesan or choice of cheese.)
