Healthy Mixed Dal Idli - Instant Pot
Mixed Dal Idli (Steamed Rice & Lentil Cakes) : Idli is a very popular south Indian breakfast or tiffin meal. Mixed dal idli recipe is a healthier version of the regular idli. This mixed dal idli recipe has a higher proportion of dals(lentils) to rice so they are very high in protein. Mixed dal idlis have a good balance of complex carbohydrates, proteins and minerals and the best part is that they are steamed. Enjoy these mixed dal/(lentils) idli with your favorite coconut chutney and sambhar!
This mixed dal idli batter can also be used to make delicious crispy dosa/ crepes and uttapam.
For Idli Batter:
Rice* - 3 cups
Urad dal/ split black lentils - 1 &1/3 cups
Moong dal/split yellow lentils - 1/3 cup
Massor dal/split red lentils - 1/3 cup
Fenugreek seeds - 1/4 teaspoon
Poha/Flattened rice - 1/3 cup
Salt To taste
Water For soaking
*Rice - Idli rice or Basmati rice can be used to make the batter. I have tested the recipe with both types of rice.

Method:
1. Wash and soak the rice, all the dals (lentils), fenugreek seeds and poha/flattened rice for 4-5 hours.
2. Grind the soaked grains in a blender to a smooth batter.The batter consistency should be like thick cake batter.
3. Cover the batter and let it ferment in a warm setting overnight or atleast 7-8 hours. Alternatively, you can use yogurt setting of Instant pot/electric pressure cooker and let it ferment for 8 hours(on normal setting).
4. Once the batter is fermented, add salt to taste.
5. Put the batter in greased idli moulds and steam for 15-18 minutes in a stovetop steamer or electric pressure cooker/ Instant pot(no pressure mode).
6. Idlis are ready to serve with your favorite coconut chutney and sambhar.
