Zucchini Muthia
Instant Pot & Air Fryer Muthiya
Muthia or muthiya is a very popular Indian/Gujrati snack made using vegetables such as zucchini, doodhi(lauki), fenugreek leaves(methi) or cabbage. Zucchini muthia are very healthy as they are made with whole grain flour, chickpea flour, spices and vegetables. Muthia are first steamed, and then topped with a tempering(tadka) of curry leaves. Zucchini muthia can be baked or pan fried and make a perfect breakfast or tea time snack.
For Muthia:
2 Cups - Zucchini/yellow squash or peeled bottle gourd(doodhi/ lauki), grated
1/4 Cup - Chickpea flour(Besan)
1/4 Cup - Semolina/ Sooji (rava)
1 Cup - Whole wheat flour (Atta)
1/2 teaspoon - Red chili powder
1/2 teaspoon - Turmeric powder
1.5 teaspoons - Coriander powder
1/2 teaspoon - Garam masala
1 teaspoon - Jaggery/brown sugar
1 teaspoon - Ginger paste
1 teaspoon - Green Chillies or to taste
1 tablespoon - Lemon juice
1/8 teaspoon - Asafoetida (Hing)
1 tablespoon - Sesame seeds
1 tablespoon - Dried crushed fenugreek(Kasoori methi)
1 tablespoon - Oil
Salt - To taste
For Tempering(Tadka):
1 tablespoon - Oil
8-10 curry leaves
1/2 teaspoon- Mustard seeds
1/8 teaspoon - Asafoetida (Hing)
Fresh coriander/cilantro for garnish
*Instead of zucchini or bottle gourd(doodhi), finely shredded cabbage or fresh methi leaves can also be used.

Method:
1. Wash and grate the zucchini. If using peel doodhi(Bottle gourd) and grate.
2. In a bowl, mix all the ingredients listed for muthiya. I did not need to add any water. Divide the dough into 4 portions.
3. Keep the steamer ready , grease a steamer basket and steam the muthiya dough for 15 minutes. If using the electric pressure cooker , steam for15 minutes(no pressure setting).
4. Let the dough cool completely, then cut into 1/6 inch thick slices.
5. Baking in an airfryer: Brush the rolls with tempering oil and put them in a greased tray. Bake at 375ºF (185ºC) for 10 minutes, flipping them halfway so they are golden brown on both sides.

6. To pan fry: Heat a teaspoon of oil in a pan , add the asafetida, mustard seeds, curry leaves. Add the muthias, cook on both sides until golden brown.
