Mixed Vegetable Lollipops In Air Fryer - Baked Veg Lollipop Starter
Mixed vegetables and paneer lollipops make a great appetizer or snack. These healthy air fryer or baked lollipops are loaded with vegetables and paneer ( Indian cottage cheese) along with zesty spices. This is a great snack for kids and parties which not only looks attractive but also tastes great with the goodness of vegetables and paneer.
Makes 16
2 large/ 1.5 cups - Cooked & grated potatoes*
1 cup - Finely shredded cabbage
1 medium/ 3/4 cup - Steamed & shredded beets
1/3 cup - Green pepper/capsicum
1 cup - Grated paneer or Extra firm Tofu
1/2 cup - Chopped onion
3 tablespoons - Cooking oil (divided use)
2 - Chopped green chillies (or to taste)
1 teaspoon - Minced ginger
1 tablespoon - Minced garlic
Salt To taste
1/2 teaspoon (or to taste) - Red chili powder
1/2 teaspoon - Chaat masala
1 teaspoon - Garam masala
1/2 cup(divided use) - Bread or poha crumbs*
1/4 cup - Fresh cilantro
10 - Mini breadsticks , cut into 3 inch pieces
Notes:
* Potatoes: Refrigerate for 1 hour after cooking and then grate to avoid sticky potatoes.
* I have used homemade whole wheat bread crumbs.
* If you wish to deep fry then additional oil for frying will be required.

Method
1. Heat 1 tablespoon oil in a pan. Add ginger, garlic and onions and sauté for 2-3 minutes. Add chopped green pepper and chillies. Cook for 1-2 minutes and set aside to cool.
2. In a mixing bowl, add grated potatoes, paneer, cabbage and beets. Add the seasonings, spices and sautéed vegetables. Combine together. Add 4-5 tablespoons of bread or poha crumbs to bind. Add fresh coriander/ cilantro.
3. Divide the mini breadstick into 3 inch pieces.Divide the dough into equal potions. Roll into a ball, slightly flatten, roll in bread crumbs and insert the breadstick. Brush the baking tray and veg. lollipops with oil.
4. To Air Fry: Pre-heat air fryer at 350ºF(175ºC). Air fry/ bake for 20 minutes. Turn over halfway in the cooking process for even cooking. Baking time may depending on the air fryer.
5. To Bake in oven: Pre-heat oven at 375ºF(190ºC). Bake for 20-25 minutes. Turn over halfway in the cooking process for even cooking. Baking time may depending on the oven.
6. To Fry : Heat oil in a pan to 350ºF(175ºC). Drop the prepared lollipop into hot oil carefully. Fry until golden an evenly cooked.
4. Serve with green chutney or ketchup.
