Grilled Spinach Corn Cheese Sandwiches








 Grilled spinach corn cheese sandwiches are perfect as a healthy, quick meal or as a snack.We love these ooey-gooey cheesy sandwiches that are loaded with healthy spinach, corn and seasoned with garlic, herbs and chili flakes. 
  The spinach corn cheese stuffing is very easy to make and the sandwiches go perfectly well with a bowl of soup or can be packed in lunch boxes.

 Makes 6

  •  Onion -  1 medium, chopped
  •  Olive oil - 1 tablespoon

  •  Bell pepper - 1 medium, chopped
  •  Garlic - 1 tablespoon, chopped
  •  Green Chili  - 1 chopped or To taste
  •  Red chili flakes - 1/2 teaspoon
  •  Italian herbs  - 1 teaspoon
  •  Spinach  - 2 cups, chopped
  •  Corn  - 3/4 cup
  •  Salt To taste
  •  Shredded mozzarella cheese  - 1/2 cup
  •  Shredded cheddar cheese     1/2 cup
  •  Cream cheese/ Greek(hung) yogurt* - 1/3 cup
  •  Butter(for grilling)  - 1 tablespoon
  •  Bread slices -     12
  •  Chipotle chili mayonnaise - 1/4 cup, optional

Notes*  
*If using greek yogurt or hung yogurt make sure it is not sour. 


Method:


1. To make the spinach corn stuffing: Heat oil in a pan on medium heat.  Add the chopped onions and bell peppers.Cook for 1-2 minutes. Add the red chili flakes. Add the Italian seasoning. Add the chopped garlic and green chili. Add the chopped spinach. Add the corn. Cook the vegetables for 2 minutes. Add salt to taste. Mix everything together.Vegetable mixture is ready.Let it cool completely. Add the cream cheese or greek (hung) yogurt. Add the shredded cheese. Mix well.


2. To assemble the sandwiches: Spread the vegetable cheese stuffing on one side. Optional: Spread spicy chipotle chili mayonnaise on the  other side. Apply some butter on outside of sandwiches for grilling.



3. For the air fryer method: Preheat the air fryer at 375ºF(190ºC) for 5 minutes. Cook for 5-6 minutes, flipping the sandwiches after 2-3 minutes. Perfectly grilled sandwiches are ready!


4. For Panini press/Sandwich maker: Heat the panini press on medium-high heat. Apply butter on outside of the sandwich.Cook until golden brown.Serve the sandwiches with your favourite sides.


5. Stovetop grill: Heat a griddle on medium-high heat and put the buttered side of bread down and cook until golden brown on both sides.
