Khasta Moong Dal Kachori
Air Fryer and Traditional Fried Methods
Kachori is a very popular north indian snack or breakfast dish. Kachori is a deep fried flatbred stuffed with different types of spicy filling made with moong dal(lentils), green peas, potatoes and served with green or tamarind chutney. My baked moong dal khasta( means flaky in hindi) kachori is a healthier option for those who want to enjoy kachoris without deep frying them. Kachoris can be baked in air fryer or deep fried the traditional way.
Ingredients
Makes 12
For the Dough:
1-1/4 cup - All purpose flour
1-1/4 cup - Whole wheat flour(Atta)
5 tablespoons - Oil or Ghee ( warm)
1/4 teaspoon - Salt
Carom seeds/ Ajwain -1 teaspoon
For the Dal Stuffing:
1 cup - Moong dal/ split yellow lentils (washed and soaked for 3-4 hours)
2 tablespoons - Oil
1 tablespoon - Coriander powder
1 teaspoon - Cumin seeds
1/8 teaspoon - Asafoetida
1/2 teaspoon - Dried mango powder(Aamchur)
1 teaspoon - Garam masala
1 teaspoon - Crushed fennel seeds
1 teaspoon- Red chili powder(adjust to taste)
1/2 teaspoon - Turmeric
1.5 teaspoons - Salt (adjust to taste)
2/3 cup - Water or as required.
*Additional oil for frying or brushing while baking/ air-frying as needed.
Method:
1. Wash and soak moong dal for 3-4 hours. Grind into a coarse paste without adding any water.
2. To make the dough: combine the flours , add salt, carrom seeds/ajwain and the hot oil or ghee. Add water gradually to make a semi- soft dough. I used about 3/4 cup of water. Cover and set aside for 20 minutes.
3.To make the stuffing: Heat oil in a pan. Add the cumin seeds, crushed fennel seeds, asafetida, turmeric, coriander powder and chili powder. Add the crushed dal. Add the salt, garam masala, dried mango powder. Add water gradually. Cover and cook for 5 minutes. The stuffing is ready to use.
4. Divide the dough into 12 parts. Roll out the dough into 2-3 inch disc and add the dal filling. Seal the karchoris and gently roll . You can also flatten the kachoris by pressing with your hands.
5. For baking in Air Fryer: Grease the baking sheet, arrange the kachoris, brush with oil. Air fry at 350ºF (175ºC) for 12-14 minutes. Turning them at half way point and brushing the kachoris with oil. The kachoris should be golden and evenly baked on both sides.
6. To deep fry: Heat oil on low- medium heat. Fry the kachoris on both sides until golden in colour.
7. Serve the kachoris with your favourite chutney such as green chutney, tamarind chutney and toppings or with a cup of tea.
