 Roasted Vegetables and Chickpea Burger Patties



Grilled vegetables and chickpea burger patties are high in protein, fiber and loaded with a variety of vegetables which pack a lot of flavour. These patties are great for making vegetarian or vegan burgers or can be served along with your favourite chutney or dip.  





Grilled Vegetables & Chickpea Patties 

Makes 8 


  • 2.5 Cups Cooked chickpeas, drained
  • 1 Cup Rolled oats (additional 1/4 cup as needed)
  • 1/2 Cup onion, sliced
  • 1  Small tomato(optional)
  • 5-6  Garlic cloves
  • 1-2  Jalapeno /green chili
  • 1/2  Cup Bell peppers, sliced
  • 1/2  Cup Cilantro
  • 2 teaspoons  Coriander power
  • 1/2 teaspoon  Cumin powder
  • 1 teaspoon  Chili powder
  • 1/2 teaspoon  Garlic powder
  • 1 teaspoon  Garam masala or tandoori masala
  • 2 teaspoon Salt or to taste
  • 1 Cup Panko breadcrumbs(regular or  gluten free )
  • Oil for brushing

Method:  

1. Soak chickpeas in warm water for 6-8 hours or overnight. Cook the chickpeas in an electric pressure cooker for 35 minutes on high pressure. You can also use canned chickpeas. Drain cooked chickpeas and set aside.

2. Arrange onions, garlic, peppers,tomatoes in a baking pan, spray with oil. Air fry at 400ºF(200ºC) for 6-8 minutes. For stovetop: grill the vegetables in a skillet or griddle.

3. To a blender jar or food processor: Add the drained chickpeas,roasted vegetables ,oats, spices,cilantro, salt. Pulse and blend until well combined. If the mixture looks too wet, add the additional 1/4 cup oats and pulse again to combine.

4. Refrigerate the prepared mixture for at least 1 hour.         

5. Divide the prepared mixture into 8 portions and form the patties. Coat the patties with breadcrumbs. Spray or brush with oil.

6. Pre-heat air fryer at 400ºF(200ºC) and bake the prepared chickpea patties for 8-10 minutes on each side. Alternately, you can shallow fry in a pan with little oil and cook on both sides until golden brown.

7.Serve with your favourite dip or chutney. You can also make delicious burgers with the patties and your favourite toppings.
